3-4 Large Muskrats (aka marsh rabbit) cut up like rabbit or squirrel 4 slices bacon 1 diced large onion flour, salt and pepper as needed
Cook bacon until crisp in a cast iron skillet. Remove. Roll rat pieces in flour, salt and pepper mix. (or dump the flour in a paper bag and shake) Brown muskrat until brown on both sides. Remove from pan and set aside. Add left over flour to pan and stir continuously as in making a roux. Flash the pan with water, beer or wine (or your favorite other adult beverage. Continue stirring until gravy is to your liking. Put browned rat pieces back in skillet and simmer slowly for about 15 minutes. Serve with anything you normally would with venison, squirrel, rabbit or ? ABSOLUTELY YUMMY. Darn. Rat season doesnt open until December ENJOY Clyde

OMG! ... I haven't heard that term in too long!.
I love Muskrat! .... if there were 100# Muskrats roaming the woods....I wouldn't give a deer a second look.

Well, this is a new one on me. Never heard of eating them before, but I'd be game. Here in my state though, you have to go through the process of passing a fur-harvester's course and get a fur-harvester's permit for them.
I've eaten other critters that live around water like that and sometimes they can have a fishy, vegetative marshy taste to them (sort of you are what you eat deal I suppose). Do these have that?

I would say that they have a very pleasant nutty taste but it's hard to describe...beyond yummy and/or delicious
